Ingredients for Soan Papdi (Makes 20–25 small pieces) :
• 2 cups gram flour (besan)
• 2 cups all-purpose flour
• 2 cups sugar
• 1 cup ghee (clarified butter)
• ½ cup milk
• 1 tsp cardamom powder
• 2 tbsp pistachios & almonds, chopped (for garnish)
How to Make Soan Papdi (Step-by-Step) :
♡ Step 1 – Roast the Flours :
Heat ghee in a pan, add besan and all-purpose flour.
Roast on low heat until golden and fragrant. Set aside.
♡ Step 2 – Make the Syrup :
In another pot, combine sugar and milk with ½ cup water.
Boil until it reaches a 2-string consistency (thick but not hard).
♡ Step 3 – Combine & Whisk :
Pour the hot syrup into the roasted flour mixture.
Stir vigorously until it starts pulling apart into delicate, flaky strands.

Pour the mixture into a greased tray.
Flatten evenly, sprinkle chopped nuts, and let cool.
Cut into squares once set.
