Ingredients for Kimchi Jjigae (Serves 3–4) :
• 1 cup aged kimchi (with juices)
• 200 g (7 oz) pork belly or shoulder, sliced (or substitute tuna/tofu)
• ½ onion, sliced
• 2 cloves garlic, minced
• 1 green onion, chopped
• 1 tsp gochugaru (Korean chili flakes)
• 1 tbsp gochujang (Korean chili paste)
• 1 tbsp soy sauce
• 3 cups anchovy or vegetable broth
• 100 g tofu, cubed (optional)
How to Make Kimchi Jjigae (Step-by-Step)
♡ Step 1 – Sauté the Base :
In a pot, cook pork with garlic and onion until lightly browned.
Add kimchi and stir-fry for 5 minutes to release its flavors.
♡ Step 2 – Add Broth & Seasonings :
Pour in the broth, then add gochugaru, gochujang, and soy sauce.
Bring to a boil, then reduce to a simmer for 20 minutes.
Step 3 – Finish with Tofu & Green Onion :
Add tofu cubes and simmer 5 more minutes.
Garnish with chopped green onion for freshness.
